These tacos are all the rage right now on Tik Tok. I am seeing them EVERYWHERE!
So, I thought I would give them a try. And let me tell you - they did NOT disappoint! They were so so so so so so good!
Here is what you need...
white corn tortiallas
1 medium onion chopped
1 bunch of cilantro chopped
oxaca cheese (monterey jack will do)
FOR THE ROAST:
3-5 lbs chuck roast
1 Tbs garlic powder
1 Tbs onion powder
1 Tbs oregano
1 Tbs cumin
1 Tbs Adobo seasoning
FOR THE SUACE:
6 new mexico chiles
5 guajillo chiles
3 arbol chiles
1 pasilla chile
1 Tbs oil
3 roma tomatoes
8 garlic cloves
1 large onion
2 bay leaves
2 tsp oregano
1 tsp cumin
1/2 tsp cinnamon
1 tsp thyme
1 inch pinch fresh ginger
1 tsp vinegar
5 cups of water
2 Tbs beef bouillon
I made this in the instant pot to quicken the time. This seems like a lot of ingredients. It is. Do not be overwhelmed by it. It's so good and totally worth it!
Here was my cooking process.
Bring the chuck roast to room temp and season it with the listed seasonings that just follow the chuck roast. Let it rest and soak in all that flavor.
Meanwhile put instant pot to saute' mode. Heat cooking oil. Add in all the chiles and stir until fragrant. Add in all remaining sauce ingredients and pressure cook on high for 5 minutes.
Instant release steam. Pour into a blender or food processor and blend until smooth.
Put instant pot back on saute' mode and sear the chuck roast on all sides until a strong crust is formed. Remove and set aside. Pour in the water and scrape up all the flavor bits that formed on the bottom of the pot.
Place roast back in pot. Strain and pour sauce over chuck roast and cook on high pressure for 60min.
Instant release steam. Remove chuck roast and shred all the meat.
Heat a frying pan or griddle on stove to medium to medium-high heat. Dip corn tortilla in consume sauce from the IP and place on pan. Grill on one side until bubbles start to slightly form, then flip over. Sprinkle cheese over tortilla. Add in shredded beef, diced onion, and cilantro. close and grill until shell is crispy.
Serve along side a bowl of the consume sauce for dipping; topped with diced onion and cilantro.
